I have been messing around with coconut milk, as a replacement for cream. I have never gone off dairy before, and thought I would try it. Right now, I am eating paleo, with the occasional peanut thrown in. Here are two ideas I had for coconut milk. One, you can use it to cream your coffee, and two, you can make a curry dip for veggies. All I added was curry paste, but you could get more sophisticated than that. Coconut is a super food, full of lauric acid, which fights bacteria in your gut, and rev.'s your metabolism. Every ounce has 2 grams of carb.'s, so it isn't a freebie, but I think it's health benefits make it worth using the grams on.
